Several of our campers have requested recipes for some of the meals we serve.  Here they are--enjoy.

SALMON SAUCE HALIBUT SAUCE

1/2 cup butter                                   

4 oz butter                                    1 oz lemon juice

3 Garlic cloves, minced

1 T, garlic , minced                          1 T. teaspoon basil

4 Tablespoons soy sauce

1/4 cup diced capers (not dry)         1 T, Parsley, chopped

2 Tablespoons mustard

3/4 cup diced tomatoes

1/2 cup ketchup

melt and brown butter, sauté garlic 1 min., add spices and

dash of Worcestershire sauce

remainder of ingredients.

Combine and heat on low.  Serve with broiled  
or baked Salmon.  
  Cooking Halibut
  Prepare fish by beating 1 egg, Dip filets in egg, cover with
  a breading of 1/4 cup crushed almonds, 1 teaspoon of
  Cajun spice  and 1/2 cup bread crumbs.  Pan fry in hot 
  skillet with oil for 2-3 minutes, until brown. Then 
  bake 5- 10 minutes at 400 degrees.  Remove when fish
  just flakes and while still moist. (also works for Salmon)

Other recipes you might want to try----  
Breaded Fish MAPLE GLAZED SALMON
Crumble/roll 75% Cheezit crackers and 25% soda crackers, 1-1/2 cups soy sauce
to make about 2 cups of breading mix, add a dash of garlic  3/4 cup maple syrup
salt.  Mix together in Zip-lock bag.  Wash and dry filets, 1/4 cup olive oil
(paper towels) dip in Egg Beaters, place in bag and turn until dash of sesame oil
covered.  Cook in pan with oil, medium-high heat, turn when 4-1/2 tablespoons fresh ginger, coarsely chopped
golden brown, turn once only, done when pieces flake with a 4 cloves fresh garlic, chopped
fork.  Finish cooking with microwave if needed. 1-1/2 tablespoons sesame seeds
  Mix ingredients and pour into a gallon Zip-lock bag.  Cut
